meet.make.zucchini pizza sticks.

Zucchini Pizza Sticks from meet.make.laugh.

While working on some wedding crafts over the weekend (less than two weeks until Hayley's wedding!) we needed some sustenance to keep us going. Who knew crafting could be such hard work?

During our first mandatory stretch break (there may also have been a second one that involved going out for frozen yoghurt....) we decided to whip up a veggie-filled snack!  We came across this pin on pinterest, and wanted to give it a try. Think margarita pizza on a zucchini!

Ingredients:
  • Zucchini
  • Roma tomatoes
  • Fresh basil
  • Fresh garlic
  • Olive oil
  • Asiago cheese
  • Salt and pepper
  • Chili flakes (optional)

Preheat the oven to 375. Cut the zucchini in half lengthwise, and depending on the size of your zucchini also cut lengths in half. Finely chop a few garlic cloves, sprinkle over zucchini and drizzle with olive oil. Add sliced roma tomatoes, chopped up basil, and asiago cheese. Add salt, pepper, and chili flakes to taste. Place on baking sheet and bake for 30 minutes.

This was the perfect snack for sharing as we crafted away. So tasty, and not too bad for you either! We definitely will be making it again, and think we might try adding some feta cheese next time.

  6. I absolutely love this idea and can't wait to give it a try! I have a gluten intolerance so the idea of using zucchini as the crust sounds amazing! Thanks for sharing!
